I came back from Miami back in July and decided to basically cut out meats (outside of fish) from my diet; i also cut out alcohol.
Yesterday was the first time I ate chicken in basically two months and my body is straight up not having a good time. Someone send help as I’m not able to leave my job for another 2 hours.

I’m finally trying to at least eat with the understanding that I have food intolerances (dairy, beer, others) and to avoid this stuff as much as possible. So yeah, having a delicious beef bahn-mi after not having any beef (short of a hamburger) for a while meant paying the price...

Im always super leety about any diet that completely cuts out a food. I hear horror stories of gluten tolerant people who suddenly aren’t anymore by trying gluten free, or the same with dairy.

I love chicken wings (preferably naked, crispy on the outside, tender on the inside, with some interesting spicy/sweet sauce that makes my nose run, but doesn’t quite make me cry).

ah. I too have experienced the rumblings from too quick a dietary change, but since you mentioned it was chicken I was just checking. Lower GI issues along with painful cramping can be a sign of salmonellosis, either from undercooked chicken or cross-contamination. I had a bout with that a few years ago. not fun.
